🌟 1. THE MOST IMPORTANT IDEA FOR A WAITER
A waiter does not need to be a professional bartender or sommelier.
But a professional Food & Beverage waiter should know enough to answer a guest’s basic questions confidently:
“What is it?”
“Where is it from?”
“What’s in it?”
“Is it sweet or dry?”
“Is it alcoholic?”
“How is it usually served?”
“What would you recommend?”
A good waiter should never invent an answer.
Use:
“Let me confirm that with our bar team for you.”
(আমি আমাদের bar team-এর সঙ্গে বিষয়টি নিশ্চিত করে দিচ্ছি।)
That sounds much more professional than:
❌ “I don’t know.”
(আমি জানি না।)
⚠️ 2. IMPORTANT CORRECTIONS FOR THE TEAM
Before teaching the staff, there are a few important points to correct.
“Hard drinks” is not the best professional term.
In international hospitality English, use:
Spirits — স্পিরিটস / distilled alcoholic drinks
Alcoholic beverages — অ্যালকোহলযুক্ত পানীয়
Cocktails — মিশ্রিত alcoholic drinks
Mocktails — non-alcoholic mixed drinks
🍇 Wine is not simply “white grapes = white wine, red grapes = red wine.”
Wine is made from fermented grapes or grape must. Red wine generally gets its colour from fermenting the juice with the skins of black/blue grapes; white wine is usually made by removing skins early, and white wine can also be made from black grapes when the juice is separated from the skins. (OIV)
🌾 Beer is not made from malt alone.
The four key ingredients are:
Malted barley + water + hops + yeast.
Malted barley provides fermentable sugars; hops contribute bitterness, flavour and aroma; yeast performs fermentation. (Brewers Association)
🥔 Vodka is not normally made from fruit juice.
Vodka can be produced from fermentable agricultural raw materials such as grains or potatoes; modern production varies by country and producer. (Spirits & Distilling)
🌵 Tequila is not made from a tree.
Tequila is produced from Blue Weber agave, particularly the plant’s central “piña” or heart. The agave is cooked, crushed, fermented and distilled. (Gobierno de México)
🍷 “Dry wine” does not simply mean “no sugar was added.”
In wine terminology, dry generally means the finished wine has very little residual sugar. The OIV defines dry wine at up to 4 g/L sugar, subject to an acidity-related allowance. (OIV)
So a waiter should say:
“Dry wine generally means the wine has very little residual sugar, so it does not taste sweet.”
(Dry wine বলতে সাধারণত বোঝায় wine-এ অবশিষ্ট sugar খুব কম, তাই এটি মিষ্টি স্বাদের হয় না।)
🍸 3. WHAT IS A SPIRIT?
A spirit is an alcoholic beverage made through distillation.
Simple explanation for a guest:
“A spirit is a distilled alcoholic beverage. Whisky, vodka, gin, rum, tequila and brandy are all examples of spirits.”
(Spirit হলো distillation-এর মাধ্যমে তৈরি alcoholic beverage। Whisky, vodka, gin, rum, tequila এবং brandy হলো এর উদাহরণ।)
Important terms:
Distillation — পাতন প্রক্রিয়া
Fermentation — গাঁজন
Maturation/Ageing — পরিপক্ব হওয়া / কাঠের cask-এ রাখা
Barrel/Cask — কাঠের পিপে
Spirit — distilled alcoholic drink
ABV — Alcohol by Volume
🥃 4. WHISKY / WHISKEY
What is whisky?
Whisky is a spirit made from a fermented grain mash and then distilled; many whiskies are matured in oak casks. Scotch whisky is regulated and must be matured in Scotland for at least three years and bottled at a minimum of 40% ABV. (Scotch Whisky Association)
Common grains:
Barley — যব
Corn/Maize — ভুট্টা
Rye — রাই
Wheat — গম
🥃 5. SINGLE MALT vs BLENDED WHISKY
This is one of the questions a German Club guest may ask.
Single Malt Scotch Whisky
A single malt Scotch is made at one distillery from malted barley, water and yeast, using pot-still distillation. (Scotch Whisky Association)
Guest asks:
“What is a single malt?”
Waiter:
“Single Malt Scotch Whisky is produced at one distillery from malted barley.”
(Single Malt Scotch Whisky একটি distillery-তে malted barley থেকে তৈরি হয়।)
Blended Scotch Whisky
A blended Scotch combines one or more single malt Scotch whiskies with one or more single grain Scotch whiskies. (Scotch Whisky Association)
Guest:
“What is a blended whisky?”
Waiter:
“A blended Scotch combines malt whisky and grain whisky from different components to create a consistent style.”
(Blended Scotch-এ malt whisky ও grain whisky-এর বিভিন্ন component মিশিয়ে একটি consistent style তৈরি করা হয়।)
🥃 6. HOW TO SERVE WHISKY
The guest may ask:
“How can I have my whisky?”
Possible styles:
Neat — শুধু whisky, ice বা mixer ছাড়া
On the rocks — ice-এর উপর
With water — সামান্য পানি দিয়ে
With soda — soda দিয়ে
With mixer — mixer-এর সঙ্গে
Whisky cocktail — cocktail-এর অংশ হিসেবে
Professional response:
“Certainly, Sir. Would you prefer it neat, on the rocks, or with a little water?”

🍸 7. WHAT IS A COCKTAIL?
A cocktail is a mixed drink combining a spirit or other alcoholic base with ingredients such as juices, syrups, liqueurs, bitters, soda or other modifiers.
The International Bartenders Association maintains an official cocktail list used as an important international reference for professional bartending. (IBA)
Guest:
“What exactly is a cocktail?”
Waiter:
“A cocktail is a mixed drink made by combining a base spirit with other ingredients such as citrus, syrup, liqueur or bitters.”
(Cocktail হলো এমন একটি mixed drink যেখানে একটি base spirit-এর সঙ্গে citrus, syrup, liqueur বা bitters-এর মতো উপাদান মেশানো হয়।)
🥤 8. WHAT IS A MOCKTAIL?
A mocktail is a non-alcoholic mixed drink.
Guest:
“Does this contain alcohol?”
Waiter:
“No, Sir/Madam. This is a non-alcoholic mocktail.”
(না, স্যার/ম্যাডাম। এটি একটি alcohol-free mocktail।)
Very important:
Do not call a drink a mocktail simply because the waiter thinks it contains no alcohol. Always follow the actual club recipe.

Based on the menu information you provided, the current cocktail list includes:

If the German Club serves a non-alcoholic “Lemon Drop,” the waiter should describe it as the club’s alcohol-free version, rather than implying that every Lemon Drop is automatically non-alcoholic. 🍸 10. LONG ISLAND ICED TEA
What is it?
Despite the name, it traditionally does not contain brewed iced tea.
The IBA specification uses:
- Vodka
- Tequila
- White rum
- Gin
- Cointreau
- Lemon juice
- Simple syrup
- Cola
The ingredients are built over ice and topped with cola. (IBA)
Guest asks:
“Does Long Island Iced Tea actually contain tea?”
Professional answer:
“Traditionally, no. Despite its name and tea-like appearance, the classic recipe is a mixture of several spirits, citrus, sweetener and cola.”
(ঐতিহ্যবাহী recipe-তে আসলে tea থাকে না। নাম ও tea-এর মতো appearance-এর কারণে এমন নাম হয়েছে; classic recipe-তে কয়েক ধরনের spirit, citrus, sweetener এবং cola থাকে।)
Guest:
“Is it a strong cocktail?”
“Yes. It contains several base spirits, so it is generally considered a strong cocktail.”

Serving:
Usually served over ice in a highball glass, with cola top and often lemon garnish. The exact house presentation should follow the club’s recipe. (IBA)
🍋 11. WHISKEY SOUR
Basic character:
A Whiskey Sour is a combination of:
Bourbon whiskey + fresh lemon juice + sugar syrup
An optional egg white can create a richer foam. The IBA recipe is shaken with ice and served straight up or on the rocks depending on presentation. (IBA)
Guest:
“Is Whiskey Sour sweet?”
“It has a balance of whiskey, citrus acidity and sweetness from the syrup.”

Classic IBA ingredients:

“A classic Margarita is made with tequila, orange liqueur such as triple sec, and fresh lime juice.”

IBA recipe:
Vodka Citron + Cointreau + fresh lime juice + cranberry juice, shaken with ice and strained into a large cocktail glass, with lemon twist. (IBA)
Guest:
“Is Cosmopolitan sweet?”
“It is generally fruity, citrusy and lightly sweet, balanced by lime acidity.”

Classic IBA ingredients:
White Cuban rum + lime juice + mint + cane sugar + soda water. It is built with ice and topped with soda. (IBA)

“A classic Mojito combines white rum, fresh lime, mint, sugar and soda water.”

🌿 15. VIRGIN MOJITO
The basic idea is the Mojito profile without rum.

“A Virgin Mojito uses the same refreshing style of mint, lime, sugar and soda, but without rum.”

Important:
The exact German Club recipe should be followed.
☕ 16. ESPRESSO MARTINI
IBA recipe:
Vodka + Kahlúa + sugar syrup + strong espresso
The ingredients are shaken with ice and strained into a chilled cocktail glass, usually garnished with three coffee beans. (IBA)
Guest:
“Does Espresso Martini contain real coffee?”
“Yes. The classic recipe uses a shot of espresso.”

It is shaken with ice and strained into a chilled cocktail glass. (IBA)

“What is a Daiquiri?”
“A classic Daiquiri is a simple combination of white rum, fresh lime juice and sugar.”
(Classic Daiquiri white rum, fresh lime juice এবং sugar দিয়ে তৈরি একটি simple cocktail।)
Taste:
Citrusy + refreshing + balanced sweet and sour
🍊 18. NEGRONI
IBA recipe:
Gin + Campari + sweet red vermouth
Equal 30 ml portions are stirred over ice in an Old Fashioned glass and garnished with orange. (IBA)
Guest:
“Is Negroni sweet?”
“It has a complex balance of bitter, herbal, sweet and citrusy flavours.”
(এতে bitter, herbal, sweet এবং citrusy flavour-এর complex balance থাকে।)

🍅 19. BLOODY MARY
IBA recipe:
Vodka + tomato juice + fresh lemon juice + Worcestershire sauce + Tabasco + celery salt + pepper.
It is stirred gently with ice and served in a rocks glass or highball depending on the requested style. Celery and lemon may be used as garnish. (IBA)
Guest:
“Is Bloody Mary sweet?”
“Not usually. It is savoury, tangy, spicy and tomato-based.”

A Virgin Mary is generally the non-alcoholic counterpart to a Bloody Mary.

🍋 21. LEMON DROP
There are two things staff must distinguish.
Classic Lemon Drop Martini
The IBA recipe contains:
Vodka + triple sec + fresh lemon juice
and is shaken with ice and strained into a chilled cocktail glass. (IBA)
If German Club serves an alcohol-free Lemon Drop:
Say:
“Our Lemon Drop is prepared as an alcohol-free mocktail.”
(আমাদের Lemon Drop alcohol-free mocktail হিসেবে প্রস্তুত করা হয়।)
Do not describe the exact ingredients unless you know the club recipe.
🍸 22. VODKA SOUR
“Vodka Sour” is not necessarily an IBA-standard specification in the same way as the cocktails above.
A conventional Vodka Sour style usually combines:
Vodka + fresh lemon/lime juice + sugar/simple syrup
and may be shaken with ice.
Guest:
“What is Vodka Sour?”
“It is a refreshing sour-style cocktail based on vodka, citrus juice and a sweetener.”
(এটি vodka, citrus juice এবং sweetener দিয়ে তৈরি একটি refreshing sour-style cocktail।)
Important:
For the German Club:
Use the club’s own bar recipe for the exact quantities and garnish.
🍺 23. BEER
What is beer?
Beer is brewed from ingredients including:
Malted barley + water + hops + yeast. (Brewers Association)
Simple process:
Malting → Mashing → Boiling → Hops → Fermentation → Conditioning → Packaging
Guest:
“How is beer made?”
“Beer is brewed from malt, water, hops and yeast. The malt provides fermentable sugars, and yeast converts those sugars into alcohol and carbon dioxide.”
(Beer malt, water, hops এবং yeast দিয়ে তৈরি হয়। Malt-এর sugar fermentation-এর মাধ্যমে yeast alcohol এবং carbon dioxide তৈরি করে।)
🍺 24. LAGER vs ALE
A waiter may be asked:
“What’s the difference between lager and ale?”
A simple answer:
“They are different beer styles with different fermentation traditions and yeast characteristics. Lager is generally fermented cooler and has a cleaner, crisper profile, while many ales are fermented warmer and can show more fruit-like aromas.”
(এগুলো ভিন্ন ধরনের beer। Lager সাধারণত cooler fermentation-এর মাধ্যমে clean ও crisp character দেয়, আর অনেক ale warmer fermentation-এর কারণে বেশি fruity aroma দিতে পারে।)

🍷 25. WINE
What is wine?
Wine is produced through the partial or complete alcoholic fermentation of fresh grapes or grape must. (OIV)
Main categories:
Red wine — লাল wine
White wine — সাদা wine
Rosé — গোলাপি wine
Sparkling wine — ফেনাযুক্ত wine
Fortified wine — অতিরিক্ত spirit দিয়ে fortified wine
Sweet wine — মিষ্টি wine
Dry wine — কম residual sugar-এর wine
🍇 26. HOW RED WINE IS MADE
Red wine normally uses dark-skinned grapes and fermentation takes place with the grape skins, which contribute colour and tannin. (WSET)
Simple waiter explanation:
“Red wine is normally made by fermenting dark grapes together with their skins, which helps give the wine its colour and tannin.”
(Red wine সাধারণত dark grapes-এর juice ও skins একসঙ্গে ferment করে তৈরি করা হয়; skin wine-এর colour ও tannin দিতে সাহায্য করে।)
🍾 27. HOW WHITE WINE IS MADE
White wine is commonly made by pressing grapes and fermenting the juice without prolonged skin contact. It can also be made from dark-skinned grapes if the juice is separated from the skins. (WSET)
Waiter:
“White wine is usually fermented from clear grape juice without extended skin contact.”
(White wine সাধারণত clear grape juice থেকে তৈরি হয় এবং দীর্ঘ সময় skin-এর সঙ্গে contact থাকে না।)
🌸 28. ROSÉ WINE
Guest:
“How is rosé made?”
Professional answer:
“Rosé is generally made from dark-skinned grapes with limited skin contact, giving it a pink colour rather than the deeper colour of red wine.”
(Rosé সাধারণত dark-skinned grapes থেকে limited skin contact-এর মাধ্যমে তৈরি হয়, তাই এর colour pink হয়, red wine-এর মতো গভীর নয়।)
🥂 29. SPARKLING WINE
Guest:
“Why does sparkling wine have bubbles?”
“The bubbles come from carbon dioxide that is retained in the wine, often through a secondary fermentation depending on the method.”
(Sparkling wine-এর bubbles wine-এর মধ্যে থাকা carbon dioxide থেকে আসে; method অনুযায়ী secondary fermentation-এর মাধ্যমে bubbles তৈরি হতে পারে।)
🍷 30. DRY vs SWEET WINE
This is one of the most important areas for waiters.
Guest:
“Do you have a dry white wine?”
Professional answer:
“Yes, Sir. A dry white wine has very little residual sugar, so it tastes much less sweet.”
(জি, স্যার। Dry white wine-এ residual sugar খুব কম থাকে, তাই এটি অনেক কম মিষ্টি লাগে।)
Guest:
“What is a sweet wine?”
“A sweet wine has more residual sugar and therefore tastes noticeably sweeter.”

The OIV defines dry wine by low residual sugar; “dry” is therefore about the final sugar level, not simply whether sugar was manually added. (OIV)
🍷 31. HOW TO DESCRIBE WINE
Teach the waiters these five words:
Dry

Sweet

Acidic / High acidity
টকটকে / সতেজ acidity
Full-bodied

Light-bodied

🍷 32. GUEST ASKS: “Which wine should I choose?”
Never immediately say:
❌ “This is the best wine.”
Ask a question first:
“Do you prefer red or white?”
(আপনি red না white পছন্দ করবেন?)
Then:
“Do you prefer something dry, fruity or slightly sweet?”
(আপনি dry, fruity নাকি একটু sweet ধরনের wine পছন্দ করবেন?)
Then:
“What are you having with the wine?”
(আপনি wine-এর সঙ্গে কী খাবেন?)
This is professional recommendation.
🍷 33. WINE SERVING — BASIC SERVICE
A waiter should understand:
Correct bottle
→ Label presentation
→ Opening
→ Appropriate glass
→ Small tasting pour where applicable
→ Guest approval
→ Serve remaining guests appropriately
→ Maintain bottle presentation
Useful English:
“May I confirm the wine you’ve selected?”
(আপনার নির্বাচিত wine-টি আমি কি নিশ্চিত করতে পারি?)
“Would you like me to open the bottle for you?”
(আমি কি আপনার জন্য bottle-টি খুলে দিতে পারি?)
“May I pour a small tasting sample?”

“How is the wine, Sir?”

Always follow the German Club’s own wine-service SOP, glassware policy and responsible-service rules.
🍸 34. GIN
What is gin?
Gin is a distilled spirit in which juniper is the defining botanical character. Botanicals such as citrus peel, coriander and herbs may also be used. (GOAL55)
Guest:
“What gives gin its distinctive flavour?”
“Juniper is the defining botanical in gin. Other botanicals may add citrus, herbal or spicy notes.”
(Gin-এর প্রধান distinctive botanical হলো juniper; অন্য botanicals citrus, herbal বা spicy flavour দিতে পারে।)
🍸 35. HOW GIN IS SERVED
Common service:
Neat
With tonic
In cocktails
Guest:
“What is gin usually served with?”
“Gin is commonly enjoyed with tonic water, but it is also used in cocktails such as Martinis and Negronis.”

🍸 36. VODKA
Vodka is a relatively neutral distilled spirit and may be produced from various starch- or sugar-rich agricultural materials, especially grains or potatoes. (Spirits & Distilling)

“Not necessarily. Vodka can be made from potatoes, but many vodkas are produced from grains.”

Tequila is a Mexican spirit made from Blue Weber agave under protected geographic and production rules. The agave heart is cooked, crushed, fermented and distilled. (Gobierno de México)
Guest:
“Is tequila made from fruit?”
“No. Tequila is made from Blue Weber agave, a succulent plant.”
